Mock Turtle Soup
- veal
- cayenne pepper
- salt
- a few anchovies
- onions
- calf's head in pieces
- marjoram
- sherry
Cut a knuckle of veal in pieces, season with cayenne and salt. Put into a stew pan with a little veal gravy, a few anchovies & onions & stew them well, then put in some pieces of calfs head seasoned as before put all into your receptacle with a fresh anchovy, an onion or two put a little sweet marjoram in the middle and pour over some sherry, then put in the oven baking it a nice brown afterwards taking out the onions and herbs put in some force meat & yellow balls. Slice a lemon put it in the middle and serve.
